4 C. cubed seedless watermelon
2 Tbsp. olive oil
3 Tbsp. lime juice
1 Tbsp. red wine vinegar
3/4 C. crumbled feta cheese
1/4 C. fresh mint or Italian parsley
1 avocado cubed (optional)
salt and pepper to taste
1. Place watermelon cubs in a large bowl
2. Whisk olive oil, lime juice, and vinegar in a small bowl and pour over watermelon. Toss to coat. Add salt and pepper to taste.
3. Gently stir in feta, avocado, and mint or parsley. Serve salad immediately.
