Cabbage and Carrot Salad with Tahini Dressing

Ingredients

    3 C. fresh red cabbage, shredded
    1 large carrot, shredded
    4 Tbs. tahini
    2 Tbs. lemon juice
    1/4 C. raisins
    1/3 C. warm water


Directions

Soak raisins in water for one hour or until plump and soft. Put raisins with their water in the blender. Add tahini and lemon juice and puree until smooth.

Combine carrots and cabbage in a bowl. Pour dressing over and combine.
